Brown Sugar Icing


1/2 cup butter
2/3 cup light cream
2 1/2 cups lightly packed brown sugar
3 to 4 cups icing sugar

In a saucepan combine butter, cream and brown sugar.  Bring to a boil and cook 2 minutes, stirring constantly.

Remove from heat and gradually beat in icing sugar.  Be sure to only add the amount to a desired consistently.  Too much icing sugar with harden quickly and be difficult to spread.

Frost cake or cupcakes immediately.
