Cheddar Bacon Biscuits in a Pan



6 strips bacon, cooked and chopped into bits
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons sugar
1/2 cup cold butter
2 tablespoons melted butter
1 cup shredded cheddar cheese
1/2 cup grated Parmigiano-Reggiano cheese
3/4 cup buttermilk

 In a large bowl, mix together flour, baking powder, slat, pepper and sugar.  Cut in the cold butter until pea-sized crumbs form.  Stir in the cheeses and bacon followed by the buttermilk.  Stir just to blend ingredients.

On a floured work surface, transfer dough.  Roll out to about 1/2 inch thick.  Cut biscuits with round cutter, about 2 1/2 or 3 inch.  Place biscuits in cast iron pan, brush tops with melted butter and bake at 425 degrees for about 20 to 25 minutes or until inserted toothpick comes out clean.

You can also make mini biscuits in a small cast iron pan....
