Tangy Egg Salad Sandwich

2 pickled eggs (yes, these are the ones I pickled last month)
6 hard boiled eggs, shelled
 6 slices bacon, cooked and chopped
2 green onions, chopped
1/4 cup ricotta cheese

3/4 cup mayo
1/2 teaspoon yellow mustard (Dijon or your favorite mustard would work fine)
salt and pepper to taste
Purple Wheat bread (or your favorite multigrain variety)

First chop, then mash pickled and hard boiled eggs.  Combine into large bowl.  Add green onions, bacon, ricotta and mayo.  Mix together and season to taste.  Fill sandwich, top with lettuce and serve.
